Ganesh Chaturthi, one of the most loved festivals in India, will be celebrated this year with great joy and devotion. For 10 days, devotees bring Ganpati Bappa home and to pandals, worship Him with rituals, sing bhajans, and perform aarti morning and evening. Along with devotion, food also plays an important role—especially the bhog (offering) prepared for Bappa.
While modaks and besan laddus are the most common sweets, you can also prepare unique barfis made from vegetables. These not only taste delicious but also add a healthy twist to your festive menu. Here are three easy vegetable barfi recipes to try at home this Ganesh Chaturthi.
1. Bottle Gourd (Lauki) BarfiIngredients: Bottle gourd, milk, sugar, ghee, cardamom powder, green food color (optional), chopped dry fruits.
Recipe:

Peel, wash, and grate the bottle gourd. Squeeze out excess water.

Heat milk in a pan and add grated bottle gourd. Cook on low flame.

Add sugar, cardamom powder, 2 tbsp ghee, and a pinch of green color.

Once the mixture thickens, add cashews, almonds, and raisins.

Spread the mixture on a greased plate, let it cool slightly, and cut into barfi pieces.
Ingredients: Pumpkin, milk, ghee, sugar, condensed milk, dry fruits.
Recipe:

Peel and grate the pumpkin. Heat ghee in a pan and sauté the pumpkin till its water evaporates.

Prepare sugar syrup with half a cup of water and sugar.

Add condensed milk to the pumpkin and cook until it thickens.

Mix in the sugar syrup and stir till the mixture becomes dry again.

Spread on a greased plate, let it set, and cut into pieces. Garnish with nuts.
Ingredients: Beetroot, ghee, sugar, cornflour slurry, grated coconut, dry fruits.
Recipe:

Peel, wash, and boil the beetroot. Grind it into a paste.

Heat ghee in a pan and cook the beetroot paste till some water evaporates.

Add a cornflour-water solution and stir continuously.

Mix in sugar, grated coconut, and dry fruits.

Once thickened, spread the mixture on a greased plate and cut into squares after cooling.
